Baptism Towels

When we have baptisms in primary we give each child a baptism towel.  A lady in the ward embroiders the childs name on one side and the date of the baptism on the other. 

So cute!

 I can’t embroider so I make CTR towels.  This one is for my nephew who is getting baptized this weekend.  I love this towel!  This idea came from Shelly.

Zucchini Bread

Process:
Sift together and set aside- 3 cups flour** 1 TBSP cinnamon** 1 tsp Salt** 1 tsp baking soda** 1/4 tsp baking powder** In a large bowl beat- 3 eggs, beaten** 1 cup sugar** 1 cup brown sugar** 1 cup vegetable oil** 2 cups shredded zucchini** Bake at 325 until golden brown. (Muffins and small loaves 25-30 min and large loaves 60 min.)

Pumpkin Bread

Process:
3 c sugar * 1 c vegetable oil * 4 eggs * 16 oz can pumpkin pie mix* * 3 1/2 c flour * 2 t baking powder * 1 t baking soda * 1 t salt * 1 t cinnamon * 1 t nutmeg * 1/2 t allspice * 1/2 t cloves * 1/2 c water * 12 oz pkg chocolate chips, optional * ———————————————————————————— In a large bowl, combine sugar, oil and eggs. Add pumpkin and mix well. Combine dry ingredients; add to pumpkin mixture alternately with water. Pour into two greased 9 x 5 x 3-inch loaf pans. Bake at 350 degrees for 60 to 70 minutes or until bread tests done. Cool in pans 10 minutes before removing to a wire rack; cool completely. Makes 2 loaves.

Pumpkin Bars

Process:
Crust: 1 box yellow cake mix- reserve 1 cup ** 1/2 cup melted butter ** 1 egg ** Mix and spread in the bottom of a 9×13 greased pan. Pre bake at 350 for 10 min. Take out and pour filling over it (it will not be thoroughly cooked). Filling: 3 c pumpkin pie mix ** 2 eggs ** 2/3 c condensed milk ** 3 tsp cinn ** 2 tsp ginger ** 1 tsp cloves Topping: 1 cup cake mix ** 1 tsp cinn ** 1/4 c soft butter Mix to a crumble and sprinkle over the top of the pumpkin pie mix. Bake at 350 for 50 minutes.

Potato Soup

Process:
Potato Soup 3-5 large russet potatoes 1/2 c diced onion 1/2 c diced celery Peel potatoes and cube. Put potatoes, onion and celery into pot with just enough water to cover. Add kosher salt and pepper. Boil to tender. In separate pot mix and heat ( I micro butter and mix flour together before adding it to the pot) 1/2 c butter 1/2 c flour 3 c milk or cream 1 can cream of mushroom Heat until a little thick and add to potato mixture. Add a little milk or cream if too thick. Mix and let thicken a little more. Add 2 c sharp or mild cheddar cheese

Mexican Soup

Mexican Soup

Process:
49 oz vegetable broth** 1 1/2 c salsa** 1/4 c lime juice** 2 cans beans** 1 c frozen corn** 1 c instant rice** 1/4 c minced cilantro** Pour broth into large pot. Add salsa and lime juice. Bring to a boil. Stir in beans, corn, rice, and cilantro. Cook until rice is tender to bite.

I got this recipe from a lady in my ward in Folsom after Kyle was born.

Chocolate Chip Oatmeal Cookies

RecipeName:
Chocolate Chip Oatmeal Cookies

Process:
1/2 c butter * 1 c sugar * 1 c brown sugar * 2 large eggs * 1 t vanilla * 2 c all purpose flour * 1 t baking powder * 1 tsp baking soda * 1 t cinnamon * 1 t powdered ginger * 2 1/2 c rolled oats * 1 c chocolate chips *————————————————————————————- Preheat over to 375 degrees. In a large mixing bowl with electric mixer, beat butter and sugars on low speed until blended. Mix in eggs and vanilla. Add flour, baking powder, soda and spices. Mix on low speed until combined. Add oats and chocolate chips. Drop batter by rounded Tbsp about 1 1/2 inches apart on baking sheets. Bake for 10 to 13 minutes* or until edges are golden brown and centers are soft and pale. They will look underdone but will firm up as they cool. Immediately remove to racks to cool. Makes about 34 cookies.

Brook’s Banana Cake

Banana Cake

Process:
2 cups flour * 1 tsp soda * 1 tsp baking powder * 1 1/3 c sugar * 1/2 c shortening * 2 eggs * 6 Tbsp sour milk * 1 tsp vanilla * 1 cup mashed banana ********** Cream together butter and sugar. Add the rest of ingredients except for eggs. Blend. Add eggs. Bake at 350 degrees for 25 minutes. Let cool and frost with cream cheese frosting.

Banana Bread

Process:
5 large ripe bananas *** 4 eggs *** 1 c butter *** 2 c sugar *** 4 cups flour *** 2 tsp baking soda *** 1 tsp salt *** walnuts —————————————————————————- In mixing bowl, beat eggs; add bananas and beat until smooth. Add butter and sugar and mix well. Add flour, soda, salt and combine. Add walnuts. Pour into 2 greased 9 x 5 loaf pans and bake at 300 degrees for about 75 minutes or until toothpick comes out clean. Cool in pans for 5 minutes, then transfer to cooling rack
